1.5 lbs baby potatoes, washed and halved

4 cloves garlic, minced

1 cup heavy cream

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional for brightness)

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 15-20 minutes or until fork-tender. Drain and set aside.

    Cook the Garlic: In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted and bubbling, add the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Make the Creamy Sauce: Reduce the heat to low and slowly pour in the heavy cream while stirring continuously. Add the dried thyme, salt, and pepper. Let the sauce simmer gently for about 3-4 minutes until slightly thickened.
