Ingredients

2 cups cottage cheese (full-fat or low-fat)

1/2 cup unsweetened almond milk (or milk of choice)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Optional add-ins:

1/2 cup dark chocolate chips

1/2 cup fresh berries (strawberries, blueberries, or raspberries)

1/4 cup nut butter (for a nutty flavor)

Chopped nuts or granola for topping

Instructions

Blend Ingredients: In a blender or food processor, combine the cottage cheese, almond milk, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend on high until the mixture is completely smooth and creamy. Scrape down the sides as needed to ensure everything is fully combined.

Taste Test: After blending, taste the mixture and adjust sweetness if necessary. If you like it sweeter, add a little more honey or maple syrup.

Fold in Add-ins: If using add-ins like dark chocolate chips, berries, or nut butter, gently fold them into the mixture using a spatula. This adds texture and flavor throughout the ice cream.

Freeze the Mixture: Pour the blended mixture into a freezer-safe container. Cover it tightly with a lid or plastic wrap.

Chill: Place the container in the freezer for about 4-6 hours or until it is firm. For the best creamy texture, stir every hour during the first 3 hours of freezing. This will help prevent ice crystals from forming.

Serve: Once the ice cream is fully frozen, let it sit at room temperature for 5-10 minutes for easier scooping. Serve in bowls and top with additional fresh berries, chopped nuts, or granola if desired.

Store: If there are any leftovers, store the ice cream in an airtight container in the freezer for up to 2 weeks.
