Ingredients

2 cups rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped nuts (e.g., walnuts or pecans)

1/2 cup dried fruits (e.g., raisins or chopped dates)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, baking soda, and salt. Stir well to ensure even distribution of ingredients.

Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey (or maple syrup), applesauce, and vanilla extract until smooth and well incorporated.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is combined and forms a sticky dough.

Add Nuts and Fruits: Gently fold in the chopped nuts and dried fruits of your choice to the oat mixture. Make sure they’re evenly distributed throughout the dough.

Press into Pan: Transfer the mixture to the prepared baking dish and press it down firmly using a spatula or the back of a spoon, ensuring an even layer.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the edges are golden brown and the center feels set.

Cool and Cut: Remove from the oven and allow to cool in the pan for 10 minutes. Using the parchment overhang, lift the bars out of the pan and transfer to a cooling rack. Once fully cooled, cut into squares or bars of your desired size.

Store: Store the bars in an airtight container at room temperature for up to a week, or in the fridge for longer freshness.
