1 pre-made 9-inch pie crust

6 large eggs

1 cup milk

1 cup diced ham

1 cup diced bell peppers (red and green)

1/2 cup diced onion

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1 tablespoon olive oil

Fresh chives (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes, or until softened.

      Stir in the diced ham and continue to cook for an additional 3 minutes until heated through. Remove from heat and set aside to cool slightly.

        In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and smoked paprika until well combined.

          Add the sautéed ham and vegetable mixture to the egg mixture, and then fold in the shredded cheddar and mozzarella cheese. Mix gently until evenly combined.

            Pour the egg mixture into the pre-made pie crust, ensuring an even distribution of the filling.

              Bake in the preheated oven for 35-40 minutes, or until the quiche is puffed and set in the center. You can check for doneness by inserting a knife into the center; if it comes out clean, the quiche is ready.

                Remove from the oven and let the quiche cool for about 10 minutes before slicing.

                  Garnish with chopped fresh chives before serving.
