Ingredients

1 cup (226g) unsalted butter, softened

1/2 cup (60g) powdered sugar

1/4 cup (30g) cornstarch

2 cups (240g) all-purpose flour

1 teaspoon vanilla extract

A pinch of salt

Colored sprinkles or crushed nuts for decoration (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

Cream the Butter: In a large mixing bowl, use an electric mixer to beat the softened unsalted butter on medium speed until it's light and fluffy, about 3-5 minutes.

Incorporate the Sugars: Add the powdered sugar and continue to beat until well combined and the mixture appears creamy, about 2 more minutes.

Add Cornstarch and Flour: Gradually sift in the cornstarch and flour, mixing on low speed. The dough should come together but remain light and airy.

Flavoring: Add the vanilla extract and a pinch of salt to the dough, mixing just until incorporated. Avoid overmixing as this could make the cookies dense.

Shape the Cookies: Using a small cookie scoop or your hands, form the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them a couple of inches apart.

Decorate (Optional): If desired, gently press colored sprinkles or crushed nuts into the tops of each dough ball for added color and crunch.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are just starting to turn lightly golden. The centers should look slightly underbaked.

Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, indulge in the bliss of these light and crumbly whipped shortbread cookies with tea, coffee, or just on their own!
