8 oz (about 2 cups) elbow macaroni

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded white cheddar cheese

1 cup shredded mozzarella cheese

1 cup shredded pepper jack cheese

1 fresh jalapeño, finely chopped (seeds removed for less heat)

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons chopped fresh cilantro or parsley (for garnish)

Instructions
 

Cook the Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce:

      - In the same pot, melt the butter over medium heat.

        - Once melted, whisk in the flour to form a roux, cooking for about 1-2 minutes until it is lightly golden.

          - Gradually whisk in the milk, stirring continuously to prevent lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

            Add the Cheeses: Once the sauce has thickened, reduce the heat to low. Stir in the shredded white cheddar, mozzarella, and pepper jack cheese, along with the chopped jalapeño. Continue stirring until the cheeses are completely melted and the sauce is smooth.

              Season the Sauce: Add the smoked paprika, garlic powder, and season with salt and pepper to taste.

                Combine Macaroni and Sauce: Add the cooked macaroni to the cheese sauce, stirring well to ensure all pasta is coated in the creamy mixture.

                  Prepare for Baking: Preheat your oven to 375°F (190°C). Transfer the mac and cheese mixture to a greased baking dish (about 9x13 inches).
