White Cheddar Stuffed Mushrooms

Ingredients
  

16 large cremini or button mushrooms, stems removed

1 cup white cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/2 teaspoon salt

1/2 cup breadcrumbs (panko preferred)

2 tablespoons olive oil

Optional: a sprinkle of paprika for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Clean the mushrooms with a damp cloth. Carefully remove the stems and finely chop them. Set the mushroom caps aside.

      Sauté the Filling: In a skillet over medium heat, add 1 tablespoon of olive oil. Add the chopped mushroom stems and minced garlic. Sauté for about 3-4 minutes until the mixture is soft and fragrant.

        Make the Stuffing: In a mixing bowl, combine the sautéed mushroom mixture, white cheddar cheese, cream cheese, parsley, onion powder, salt, and black pepper. Mix well until combined.

          Fill the Mushrooms: Using a small spoon, generously fill each mushroom cap with the cheese mixture. Press down slightly to ensure they are well packed.

            Prepare for Baking: Place the stuffed mushrooms on a baking sheet lined with parchment paper. In a small bowl, mix the breadcrumbs with the remaining tablespoon of olive oil. Sprinkle the breadcrumb mixture evenly over the stuffed mushrooms.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

                Garnish and Serve: Remove from the oven and allow to cool for a few minutes. If desired, sprinkle with paprika for garnish before serving.
