Ingredients

1 lb boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chilies

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp cayenne pepper (adjust for spice preference)

4 cups low-sodium chicken broth

1 cup corn kernels (fresh or frozen)

1 cup heavy cream

2 tbsp olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Sauté the aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

Cook the chicken: Season the chicken breasts with salt and pepper, then add them to the pot. Sear on both sides for 5-6 minutes until golden brown.

Add spices and liquids: Stir in the cumin, oregano, and cayenne pepper, allowing them to bloom for about 1 minute. Pour in the chicken broth and add the diced green chilies, bringing the mixture to a gentle simmer.

Add beans and corn: Add the rinsed white beans and corn to the pot. Cover and let it simmer for 20 minutes, allowing the flavors to meld.

Shred the chicken: After 20 minutes, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.

Creamy finish: Stir in the heavy cream and allow the chili to simmer for an additional 5-10 minutes. Adjust seasoning with salt and pepper as needed.

Serve: Ladle the white chicken chili into bowls, garnishing with fresh cilantro and a squeeze of lime juice. Serve with tortilla chips or warm bread on the side.
