1 ½ cups granulated sugar

1 tablespoon freshly squeezed lemon juice

½ teaspoon vanilla extract

¼ cup water

1 tablespoon fruit pectin (optional, for thicker jam)

Prep the Figs: Begin by washing the fresh figs under cold water. Remove the stems and quarter them. Set aside in a bowl.

    Cook the Mixture: In a large, heavy-bottomed saucepan, combine the quartered figs, granulated sugar, lemon juice, water, and vanilla extract. If you prefer a warmer flavor profile, add ground cinnamon as well.

      Simmer the Jam: Place the saucepan over medium heat and stir the mixture gently. The sugar will begin to dissolve, and the figs will release their juices. Allow the mixture to come to a gentle simmer.
