Zesty Italian Sausage and Pepper Bake

1 lb (450g) Italian sausage links (mild or spicy, your choice)

2 large bell peppers (one red, one yellow), sliced into strips

1 large onion, sliced

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with herbs or plain)

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, adjust to taste)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sausage: In a skillet over medium heat, add a splash of olive oil and brown the Italian sausage links until they are nicely browned on all sides (about 3-4 minutes). Remove from heat and slice them into bite-sized pieces.

      Sauté the Vegetables: Use the same skillet to add the sliced onions and bell peppers. Sauté for 5-7 minutes until they are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: In a large baking dish, combine the browned sausage, sautéed peppers and onions, diced tomatoes (with juices), oregano, basil, red pepper flakes, salt, and pepper. Mix well to combine all ingredients evenly.

          Bake the Dish: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, until the sausage is cooked through and the mixture is bubbly.

            Serve: Remove from the oven and let it rest for a few minutes. Garnish with fresh basil and serve hot, topped with grated Parmesan cheese.
