8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

    Prepare the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant.

      Add Shrimp: Toss in the shrimp, lemon zest, and red pepper flakes if using. Season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, add the remaining 2 tablespoons of butter and the lemon juice, scraping up any bits stuck to the bottom of the pan. Add the halved cherry tomatoes and cook for 2-3 minutes until softened.

          Combine Pasta and Shrimp: Return the cooked shrimp to the skillet, along with the drained pasta. Stir well to combine, adding reserved pasta water a little at a time to achieve your desired sauce consistency.

            Finish with Fresh Herbs: Remove from heat and stir in the chopped parsley and Parmesan cheese (if using). Adjust seasoning to taste.
