1 cup jasmine rice

1 cup coconut milk

1 cup water

1 tablespoon lime juice (freshly squeezed)

Zest of 1 lime

1 tablespoon sugar or honey (optional)

1/4 cup fresh cilantro, chopped

1/4 cup toasted coconut flakes (unsweetened)

1/2 teaspoon red pepper flakes (for a kick, optional)
