2 medium zucchinis, grated

1 cup corn kernels (fresh or frozen)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for frying

Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze to remove excess moisture. This step is crucial for achieving crispy bites.
