Zucchini Lasagna Roll-Ups

3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus ½ cup for topping)

1/2 cup grated Parmesan cheese

1 egg

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat the oven to 375°F (190°C). Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin strips (about 1/8 inch thick). Lay the strips on a clean kitchen towel, sprinkle with salt, and let them sit for about 10-15 minutes to draw out excess moisture. Pat dry with another towel.

    Mix the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper. Mix well until thoroughly combined.

      Assemble the Roll-Ups: Spread 1/2 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Take a zucchini strip, spread about 2 tablespoons of the cheese mixture along the length of the strip, and roll it up tightly. Place the rolled zucchini seam-side down in the baking dish. Repeat with the remaining zucchini strips and filling.

        Top and Bake: Once all roll-ups are arranged in the dish, pour the remaining marinara sauce over the top. Sprinkle with the additional ½ cup of mozzarella cheese. Cover the dish loosely with aluminum foil.

          Bake the Dish: Place the dish in the preheated oven and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden.
