4 medium zucchinis

1 cup fresh basil leaves

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/2 cup pine nuts (or walnuts)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

Cherry tomatoes, halved (for garnish)

Grated lemon zest (for garnish)

Optional: Red pepper flakes (for added spice)

Instructions
 

Prepare the Zucchini Noodles:

    - Using a spiralizer, julienne peeler, or knife, turn the zucchinis into noodles. If they are too watery, place them in a colander, sprinkle with salt, and let them sit for 15-20 minutes. Rinse and pat dry.

      Make the Pesto:
