2 medium zucchinis

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon dried basil

½ teaspoon salt

¼ teaspoon black pepper

1 large egg

2 tablespoons olive oil

Fresh parsley or basil, for garnish (optional)

Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare Zucchini: Wash the zucchinis and slice them into thin rounds, about ¼ inch thick. Lay them out on a clean kitchen towel or paper towel, sprinkle with a little salt, and let them sit for about 10 minutes to release excess moisture. This helps them crisp up during baking.

      Make the Coating: In a mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, dried oregano, dried basil, salt, and black pepper. Mix until evenly combined.

        Prepare Egg Wash: In a separate bowl, whisk the egg until well-beaten. Add the olive oil and mix until blended.

          Coat Zucchini Rounds: Pat the zucchini slices dry with a towel.
