Zucchini & Tomato Gratin with Fresh Basil

2 medium zucchinis, sliced into thin rounds

2 large tomatoes, sliced into thin rounds

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup fresh basil leaves, chopped

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and minced garlic. Sauté until the onions are translucent, about 5 minutes.

      Layer the Gratin: In a greased 9x13 inch baking dish, layer half of the zucchini slices on the bottom. Follow with half of the tomato slices, sprinkling half of the chopped basil, oregano, salt, and pepper over the top. Spread half of the sautéed onions and garlic mixture evenly over the tomatoes.

        Repeat Layers: Repeat the layers with the remaining zucchini, tomatoes, and onion mixture.

          Add Cheese: Sprinkle the shredded mozzarella cheese over the top layer. Follow with the grated Parmesan cheese.

            Drizzle with Balsamic: Finish the gratin by drizzling the balsamic vinegar over the cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.

                Garnish and Serve: Remove the gratin from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
